Easy Crockpot Veggie Lasagna

This Easy Crockpot Veggie Lasagna recipe is literally a no brainer!


It takes just 5 ingredients, comes together in 5-10 minutes, and the Crockpot does the rest!

I love Crockpot Meals. The problem is, vegetarian Crockpot meals are few and far between.


Most Crockpot recipes have either meat or meat or chicken stock in the recipe.


And while some of those ingredients can be eliminated or swapped out, many of those recipes just don't convert well to a vegetarian meal.


So let me tell you I was thrilled when I nailed this Easy Crockpot Veggie Lasagna recipe on the first try!


It's so yummy, kinda healthy, and so easy to make!


Throw it together and you've got the perfect, semi-healthy, quick Crockpot vegetarian meal!


This Easy Crockpot Veggie Lasagna recipe cooks for 3 hours with an additional hour of "sit" time so it's not watery.


It serves 4!


If you have a larger family, you can absolutely add additional layers to serve more people (see more on that below).


If you're vegan, you can probably swap out the cottage cheese for a vegan cheese option.


The possibilities with this one are endless!

Substitutions


This Easy Crockpot Veggie Lasagna recipe is easy to customize, too!


You can substitute ingredients, or add additional ingredients, to your liking.


You can swap out spinach for kale.


You can swap out cottage cheese for ricotta cheese - making it more like a "traditional" lasagna.


You can even add in additional veggies to amp up the health factor, such as zucchini & squash!


Regardless of how you make it, this Easy Crockpot Veggie Lasagna recipe is the perfect meal to make on a cold winter's night, or to have cooking away while you're out enjoying the summer sun!


I like getting it going after lunch so it's ready at dinner time.

Easy Crockpot Veggie Lasagna recipe

EASY CROCKPOT VEGGIE LASAGNA RECIPE


Ingredients


● 2-3 cups of finely chopped spinach

● 24oz of your favorite tomato sauce

● A box of"bronze cut"lasagna noodles (uncooked)

● 24oz of cottage cheese

● 16oz of shredded mozzarella cheese

● Vegetable cooking spray

● Large Crockpot

Prep Time: 5-10 Minutes

Cook Time: 3 hrs.

Rest Time: 1 hr.


Preparation


Lightly coat your Crockpot with cooking spray to keep your lasagna noodles from sticking.


Cover the bottom of your Crockpot with one layer of lasagna noodles (break them as necessary). It's not going to be perfect, and it doesn't have to be.


Add ⅓ of your cottage cheese. Gently spread it over the noodles, covering them.


Add ⅓ of your finely chopped spinach, covering your cottage cheese.


Add ⅓ of your pasta sauce, covering your spinach.


Add ⅓ of your shredded mozzarella cheese, covering all of that.


Now do this layering 2 more times, again starting with your dry noodles as the base.


After you have 3 layers in your Crockpot, put the lid on it and turn it on high.


Cook for 3 hours.


After 3 hours turn your Crockpot completely off.


Leave the lid on it, and let it sit for 1 hour. This will help dry out the lasagna and allow the moisture to be absorbed.


At the end of the hour, open that bad boy up and serve!

Tips


Pair it with a yummy salad and a loaf of Italian Bread for a complete, mouthwatering meal!


Add your favorite veggies!


We love throwing in a couple of handfuls of fresh mushrooms!
